This is our go-to lazy weekend meal. Toss chopped tomatoes, garlic, olive oil, basil, a pinch of red pepper flakes, and uncooked pasta into a pot with some vegetable broth. Bring it to a boil, stir occasionally, and in about 12 minutes you’ve got a creamy, flavourful pasta without a mountain of dishes. Top with parmesan and a drizzle of good olive oil. It’s almost embarrassingly easy.
